In 12 days, we harvest Château de Marsannay’s 40 hectares with 100 grape-pickers.
A meticulous sorting at the reception in the cellar allows to remove the roasted and the damaged berries to keep only the most beautiful logs. After manual harvest, pneumatic pressing of the whole grapes and settling, the alcoholic fermentation starts in barrels and the wine ages on its lees 11 months in new oak barrels (20%) as well as in oak barrels of one to four years, then 7 months in a tank
